February Festivities

 Hello everyone! I’m taking a short break from writing about my students. Some fun things happened in February, so I wanted to pause to share them with you. Let me start by saying that February is certainly a month of desserts, so get ready for a post of deliciousness!

We started off with a birthday. My roommate loves chocolate (which is only natural, of course).  So, I simply had to make the most chocolatey thing I could find.... Chocolate Mud Cake! Which, of course, is made in a crock pot.

It was served warm with ice cream, and was oozing chocolate. It was a big hit. The result?

Valentine’s Day (and Little Sibs weekend) rolled around, and it was time for another dessert.  I made Soft Lemon Drops, but since they had to be pink, they were renamed: Pink Lemonade Cookies! Also a big hit, but I don’t have any pictures of them.

Next weekend? Why, another birthday! For this one, I decided to make a Nutella Cake.  I found a lot of different recipes online, and sometimes they were a bit confusing, so a bit of experimenting was required.  I went a little over the top with this one.

 ... topped with crushed hazelnuts and Ferrero Rocher chocolates.
It didn’t turn out perfect, so I guess I’ll just have to make it again. Oh, too bad.

Lastly, yet another birthday. Again, no pictures, but this was by far my favorite cake (and it was the easiest!).  For this birthday, I made a Tres Leches cake, which is traditionally a Latin American cake.  As you might be able to tell from its name, its a cake with three different kinds of milk poured over it (tres leches = three milks, get it?). It was definitely my favorite, and several other people said the same.
