Recipe Round-Up

I was going to save this week's blog post for today (instead of yesterday), so I could share with you how my first day of work went. However, winter had something to say about that, and school was closed because of the snow. I was pretty disappointed that I couldn't meet my kiddos, but I wasn’t disappointed that I got to stay home and finish unpacking the kitchen. It looks like a real kitchen now, which makes my heart happy. Since we love cooking here at our house, I thought I’d share some recipes that we’ve discovered over the last month. Since I wasn’t working, we had more time to experiment with some new recipes.  So let’s get down to business.

Grandma’s Honey Muffins
Since I was home alone all day, every day, I just decided to bake all the time. These muffins were really easy, and used ingredients that we already had in the house, which is great for people who have just moved. They’re also quite tasty.

P.F. Chang’s Lettuce Wraps
I’ve never actually had P.F. Chang’s, so I can’t tell you how these compare. But I DO know that they were good. However, this recipe was a bit time consuming. I wasn’t difficult, but it was complex, and there were a lot of small things to prepare. But if you’ve got the time, and want to eat some delicious wraps, you should try these.

Chicken Avocado Burritos
Wow. So good. So easy. Not really sure what else to say about these. If you need a quick dinner, try these out. Easy, and healthy. Does it get much better than that?

Korean Beef Bowl
Ok, so this one is out-of-this-world delicious. It's also super quick to make. She’s not kidding when she says 15 minutes. Really, it’s cooking the rice that takes the longest. It’s so good that I’m contemplating making a jar of the sauce, and keeping it in the fridge to use whenever I want. Then it will be even faster.

Cheddar Bay Biscuits
I actually haven’t made this one in a couple months. I’m just sharing it with you because I really need to get off my computer and start making them, so that they’re ready in time for our company tonight. Also, they’re delicious and I could eat a dozen of them if I wasn’t concerned about my waistline.
