Recipe: Chicken Satay Bowl with Peanut Sauce


It really bothers me when food bloggers post a recipe with a zillion pictures of the same thing, plus really long descriptions of the process, AND a bunch of other random things that I don’t particularly care about, and you have to scroll down for five years just to reach the recipe. So, I’m going to keep this short. Two things:
  1. My favorite thing to get a Thai restaurants is chicken satay. In case you haven’t had it, it’s basically meat on a stick, with peanut sauce. Also known as the best thing in the world. One day, I was craving it, but I didn’t have any skewers, so I decided to make my own version, with rice so it would be a bit more filling. I started with this recipe and made some modifications.
  2. I’m not a food blogger. I love taking pictures, and I love food. But I hate taking pictures of food. I was so frustrated while photographing this meal because all I wanted to do was EAT IT. It smelled so good, and I was so hungry that my hands were shaking. But I took pictures anyway. You’re welcome.




Recipe: Chicken Satay Bowl

Ingredients for chicken:
1 chicken breast
1/2 tsp cumin
1/2 tsp salt
1/4 tsp ground ginger
1/4 tsp curry powder
2 tbsp sesame oil
Ingredients for peanut sauce:
2 tbsp rice vinegar
2 tbsp soy sauce
1 tsp minced garlic
2 tbsp honey
1/4 tsp red pepper flakes
1/2 cup peanut butter
water to thin
Additional ingredients:
white or brown rice

Preheat oven to 350 degrees.

Cut chicken breast into cubes. In a separate bowl, mix cumin, salt, ground ginger, curry powder, and sesame oil. Add cubed chicken and mix until the chicken is coated with the sesame oil mixture. Transfer to a baking dish and bake for 30 minutes or until cooked through.

Meanwhile, cook rice as desired.

To make the peanut sauce, mix all the ingredients until smooth and creamy. Add water to reach the desired consistency.

Serve the chicken on the rice, and drizzle with peanut sauce. Enjoy!
