Monday Makings: January Recipes
So as you know, Judah and I did a “simplicity diet” for the month of January. You can read about it here if you haven’t already. So I thought I’d share some recipes that we used. This list is by no means comprehensive, since some of the meals we had were made up, like beans and rice (literally just beans cooked in a skillet, and rice). Read down to the bottom for a bonus recipe!

For any recipes that included ingredients not on our list, we simply omitted those ingredients. We also made a lot of sweet potato fries during this diet. Really, we made them almost every night. They are so easy and delicious. No matter how tired we got of our other seven ingredients, we never got tired of these!
Sweet Potato Fries
- sweet potatoes (as many as you want)
- olive oil
- your choice of spices
Preheat oven to 350 degrees.
Cut your sweet potatoes into french fry shapes.
In a bowl, mix sweet potato fries with olive oil and spices to taste. (I like garlic powder, chili powder, and cumin, but you can use almost anything.)
Spread evenly onto a pan, with no fries overlapping.
Bake for one hour at 350 degrees.*
Raise the temperature to 400 degrees and bake for an additional ten minutes.
*We use stoneware pans, so if you are using a regular sheet pan, cooking times may vary. Watch your fries to make sure they don’t burn.
