Monday Makings: Christmas Cookies
Every year, my family makes a boatload of cookies for Christmas, and naturally, I wasn't about to drop this tradition when I got married. The problem is, however, there are only two of us (now three, but babies can't have cookies), and we make way more cookies than we can handle. That's just what happens when you want to make five or six different kinds of cookies. Nevertheless, this is not a good way to lose the last of my baby weight, so we'll be making friends with our neighbors this year. Hope they like cookies.
Anyway, I thought I'd share some of our favorite recipes with you.
Shortbread cookies
OK, so these are literally just flour, butter, and sugar, but they are so good and super easy. Warning: these are extremely rich and I would not recommend rapid consumption of multiple cookies. Also, we don't roll these out. We just shape them into cubes or balls.

Light, crumbly, and nutty, these are also a cinch to make. Swap out the walnuts for pecans and you magically have Mexican wedding cookies. Those are also amazing.
Thumbprint cookies
We usually just roll these in sugar, instead of the nuts that the recipe recommends, but both ways are delicious!

I've always been intimated by these because whenever people make them, they say, "Oh it's so easy, you just blah blah blah blah," and I get confused and tune out. Turns out it really is as easy as people say. I just needed to read the recipe. Oh, and if you're coating the in chocolate, I'd recommend using a double boiler, or buying chocolate specifically made for melting. Also known as melting chocolate...

I can't share the recipe for these because it's my best friend's secret family recipe, and I had swear an oath and sign a confidentiality agreement when she gave it to me. OK, I actually have no idea if it's a secret family recipe, but I still feel like it's not mine to share. But if you're dying to try some, I'll make them for you ANY TIME because they're so good.
