Monday Makings: Auntie Erin's Ginger Cookies


A few weeks ago, we shared some recipes for the Christmas cookies we made, and I had quite a few requests for the ginger cookies, and I've been given permission to share this family recipe. And I am SO excited for you all because these cookies are the best! These are not like ginger snaps. They have a similar taste, but are so soft, chewy, and flavorful! In high school and college, I always looked forward to any occasion for which my best friend, Erin, made these cookies. In her house, they are known as Grandpa B's ginger cookies, but in our house, we call them Auntie Erin's Ginger Cookies. Find the recipe below!

Auntie Erin's Ginger Cookies

3/4 cup shortening (If you're Judah, you use butter)
1 cup sugar
1/4 cup molasses
1 egg
2 cups flour
2 tsp. baking soda
1/2 tsp. ginger
1/2 tsp. cloves
1 tsp. cinnamon
A dash of salt
Additional sugar for rolling the cookies in

Preheat oven to 365 degrees.
Melt shortening and let cool. Add sugar, molasses, and egg. Mix well.
Add dry ingredients and flavorings. Mix well.
Roll into 1-inch balls and roll in granulated sugar.
Bake on a greased cookie sheet at 365 degrees for approximately 8-9 minutes. Do not overbake!
Let cool, and then eat them ALL in one sitting! (Ok, that last part is my suggestion...)
