Monday Makings: Oatcakes
I know, I know, oats are not part of the simplicity diet we are doing for the month of January. But, I (not Judah) have modified my diet to be more nursing-mom-friendly. While the diet was working well for Judah, I was having a hard time keeping up with it. Breastfeeding makes you really hungry all the time, and the ingredients in our diet aren't conducive to quick, easy snacking. I mean, who has time to cook a sweet potato with a crying baby on your hands? So I added oats and almonds to my diet, because they are quick, easy, healthy, and fill me up.
I've been using oats to make oatcakes, using this recipe found here at Frugal Feeding. These things are so easy and tasty!
A few notes about this recipe. I used a fraction of the amount of pepper, because it was too spicy when I used the amount given in the recipe. Also, I didn't roll and cut the dough. I just shaped patties by hand because I was too lazy clean off counter space. But overall, these are a really great, healthy snack, and I can't wait to try them with different toppings when this diet is over.
